Pumpkin Bread Pudding with Chocolate

(FOX Providence) - We're cooking Warm Pumpkin Bread Pudding with Dark Chocolate, Bourbon Sauce and Pumpkin Seed Glass with Chef Chris Palios of Sophia's Tuscan Grille.


16 oz. Portuguese Sweet Bread
6 oz. Dark Chocolate Chips
4 oz. Butter, melted
8 oz. Pumpkin Puree
2 cups Milk
2 cups Heavy Cream
2/3 cup Sugar
2 tbsp. Vanilla
8 Eggs

Bourbon Sauce

½ quart Heavy Cream
Powdered Sugar to Taste
1 tbsp. vanilla
3 tbsp. Bourbon
Whip mixture to soft peaks.


Cut the bread into 1” cubes.
Place in 2 quart baking dish. Drizzle with butter.
Top with dark chocolate.
Combine milk, cream, vanilla, and sugar and bring to a boil. Temper eggs and hot milk mixture.
Whisk in pumpkin puree and pour custard over bread.
Bake 325 for 45-60 minutes until golden brown.
