Zesty Sirloin and Spicy Prawns

From the kitchen of Sophia’s Tuscan Grille

(FOX PROVIDENCE) - We're cooking Zesty Espresso Rubbed Sirloin and Spicy Sicilian Prawns from the kitchen of Sophia’s Tuscan Grille.


For the Steak:

1 14oz Sirloin Steak
2 tbs. Sophia’s Chef Signature Zesty Espresso Rub
3 tbs. Extra Virgin Olive Oil
1 Lemon
2 oz Baby Arugula

For the Prawns:

3 Head on Prawns
4 tbs. Sophia’s Chef Signature Spicy Sicilian Rub
2 tbs. Extra Virgin Olive Oil
1 Lemon


For the Steak:

1. Drizzle half the olive oil over sirloin and coat both sides.
2. Liberally rub the Zesty Espresso Rub into the meat.
3. Preheat your outdoor grill or grill pan to medium-high and cook the steak for 3-4 minutes on each side for medium rare. Place half of the lemon cut side down on grill for 30 seconds to allow it to nicely char.
4. In a small bowl lightly toss baby arugula with the rest of the olive oil and the juice from the other half of the lemon.
5. Allow the steak to rest for 2-3 minutes before serving and top with the tossed arugula and garnish with the grilled lemon.

For the Prawns:

1. In a large bowl drizzle the prawns with olive oil and season with Spicy Sicilian Rub. Cover with plastic wrap and allow to marinate in refrigerator for one hour.
2. Preheat your oven to 450° and lay out prawns on a cookie sheet and allow to roast for 5-7 minutes or until firm and opaque.
3. Arrange on a platter and drizzle with more olive oil and a squeeze of lemon.
